The Graduation & Home Cook Hero Award for the Rolo & Malteser Brownie Slice

 What a busy weekend in the “Ryan Household”. A good busy for a change – not the usual weekend shopping and chauffeuring kids duties.

My son Adam graduated last Friday from ITB Blanchardstown

He’s the first in our house to graduate & we are so proud of him.  All his hard work paid off.  Yes we took lots of photos much to Adam’s annoyance  , like me Adam  hates getting his photo taken, he prefers to be on the other side of the camera.  He helps me with most of the food photography for my blog, and of course he gets paid usually in whatever he’s photographing !.

Then very early on Saturday morning we headed up to Cooks Academy in Dublin for the Easy Food Magazine Home Cook Hero Awards.  My daughter Amy was one of the finalists in the Connacht Gold #buttermeup section with our Brownie Pizza Slice that you would have seen on my blog earlier this year. It was one of my first posts.

This is the 5th year for the Easy Food Magazine Home Cook Hero Awards, a fabulous cooking competition for all  home cooks and bakers nationwide, young and old.   Easy Food Magazine is Ireland’s Number One Food Magazine and I have been a great fan of it since its very first issue.  Their Christmas Annual is out in the shops at the minute and its chocker full of easy christmas recipes, brilliant articles and some fab competitions.



The  HOME COOK HERO AWARDS have been held the past five years in Cooks Academy in South William street – one of Ireland’s top cookery schools.

The finalists then go on to  cook their dishes , three in each of the 8 categories, for the judges who this year were the fabulous  Catherine Fulvio, Nick Munier & Gina Miltiadou

It was a huge experience for Amy, more so because Amy is visionally impaired.  She began losing her sight three years ago and at present has only a small amount of vision left in one in one eye.  She never lets her disability stop her dong anything and we are so very proud of her and what she has achieved.

We headed to the Shelbourne Hotel later that night for a big awards ceremony hosted by Martin King and which will be televised on TV3 this Saturday 14th November.   I’m over the moon to tell you  Amy went on to win the award   for  best cooking skills of the whole competition

We are so very proud of her and what she has achieved.  She is an inspiration to us and to everyone who knows her!!

If you would like to recreate her Rolo & Malteser Brownie, please follow the recipe below or alternatively follow the link to the recipe index



100g Dark Chocolate
100g Butter
200g Self Raising Flour
200g Brown Sugar
3 large eggs
2 tbsp. cocoa powder
3 pkt rolo
100 g box maltesers
3-4 tbsp. caramel sauce (available in any supermarket)
2 x 7-8” foil tins or you can use 2 spring form cake tins

Preheat the oven 180c and prepare foil tins by greasing the sides with butter and place a circle of parchment paper in the bottom

Melt the chocolate and butter together in a sauce pan over a low heat,
turn off the heat and gradually stir in the sugar and eggs and add the self-rising flour and cocoa powder

Divide the mixture between the two tins, chop up some rolo and maltesers and press into brownie mix. Be Generous with the rolo and maltesers !!!!

Bake for 20 minutes at 180C, the middle should be soft. Let the brownies cool slightly but while still warm top with some more rolo and maltesers.

Finish off with a drizzle of caramel sauce.

Cut into triangle slices and try not to eat more than 2 and leave some for the kids 😉

      Good Morning Debbie from the USA..appreciate you taking the time to comment..Rolos & maltesers are very popular in my house, but anything added to a brownie would make it extra yummy.. Happy thanksgiving to you and all your family
