In need of a coffee “pick-me-up” !! Then look no further, I have the perfect RECIPE for you. It’s boozy, laced with strong dark coffee, topped with mascarpone and a dusting of cocoa.
Hey, I know what you’re thinking it’s Tiramisu – that really delicious Italian Dessert and yes, your absolutely right, but not in it’s usual “traditional” form. This Tiramisu has been given a makeover.
Behold the very Italian and very yummy Tiramisu Cupcake.
If you love coffee as much as I do then you will absolutely love this delicious coffee cupcake. So, easy to put together, I promise, less than 10 mins .
These light sponge vanilla cupcakes are soaked in hot coffee – I used my favourite dark Kenco coffee.
If you happen to have some coffee liqueur lying about (such as Tia Maria) then add a tsp or two to the coffee. If you haven’t no worries the coffee will do just fine.
Always make sure the coffee is hot, the cake absorbs it quicker that way. A quick 2 second dip is all you need to get the perfect coffee hit.
Of course, a tiramisu would be just a plain coffee dessert without it’s delicious mascarpone topping. These cupcakes are no exception, each cupcake is finished off with a whipped mascarpone cream frosting and of course a dusting of cocoa powder.
A few tips for the perfect Tiramisu Cupcakes
- Always us the best full fat mascarpone cheese
- Ground coffee works best, instant coffee doesn’t have the kick!
