APPLE-CRUMBLE MUFFINS WITH FRESH WHIPPED CREAM

Apple-Crumble muffins

 

So today I’m talking muffins!!!  I never expected to write this recipe up as a post, (which is why I don’t have many photo’s) but these Apple-Crumble Muffins were so delicious  that it would be shame not share the recipe.

The unexpected, spur of the moment bakes always turn out to be the best, don’t you think?  Much like the unexpected guest which is why these muffins ended up in the oven in the first place.

As luck would have it I had decided that Wednesday was going to be “steam clean the carpets” day,  so I was in the process of  moving (dumping) furniture out into the hall,  when the phone rang.  My Aunt who is the  “unexpected guest “   decided to give me 45mins notice that she was dropping in on her way home.   This is a woman I mean person that doesn’t take NO for answer.    The house looked like a bomb hit it!   I had the best part of 45 mins to tidy up and put everything back and as per usual the kids had wolf down the last of the Victoria Sponge that I had baked the day before, so there was nothing to have with a cuppa.

Being a baking blogger with no cake in the house, she would never let me live that down.

What could I bake that’s quick to mix up, bakes in a jiffy and tastes delicious my old reliable MUFFINS – but what kind?

Bingo  – I had purred apple in the fridge and I always have some homemade crumble in the cupboard – it’s great for making a quick crumble with fresh berries.  I found a carton of cream hidden behind the milk, so Apple-Crumble Muffins it is. These take less than 10 mins to put together and about  30-35 mins to bake.  The perfect quick bake for those cake emergencies.

When the Apple-Crumble Muffins were cold, I used a teaspoon to scoop out the top of the muffin and filled it with whipped cream.  I topped the cream with some more Apple.  It really was Apple Heaven.

After a great chat and lots of laughter I waved her off 2 hours later with the remainder of the muffins and a promise to write-up the recipe.

I gave the steam cleaner the evil eye and quickly packed it away.  I put the kettle on, grabbed my camera to take at least one cake photo and retrieved the very last muffin I had hidden behind the corn flake boxes.

So as Scarlet O Hara famously said in GONE WITH THE WIND     “Tomorrow is another Day” .  I’ll steam clean tomorrow unless I can find another excuse not to.

I hate steam cleaning the carpets, maybe I could bribe someone with muffins to do it for me, now there’s a plan!

APPLE CRUMBLE MUFFINS
****RECIPE***
For the Crumble
15g soft butter
25g plain flour
15g brown sugar

For the muffins
300g plain flour
1tbsp baking powder
175g caster sugar
210ml milk
1 egg
100g butter, melted
200g pureed/stewed apple (see below)
250ml whipped cream
1/2tsp cinnamon

To puree Apple
Slice 3 apples, add apples to pot with 2 tbsp. water and 1 tsp brown sugar. Bring apples to the boil, then gently simmer for 15-20 minutes or until soft. Drain the excess water Mash lightly with a fork, I like a few chunks still left in them.

1. Preheat oven to 200C/180C fan. Place paper cases in your muffin tin. Make the crumble topping by rubbing together the butter and flour till it resembles breadcrumbs, add the sugar and set to one side.

2. Sift the flour and baking powder, cinnamon into a mixing bowl, add in the sugar. In another bowl, mix together milk, egg and the melted butter.

3. Stir the wet mixture into the dry mixture till combined. (DON’T OVER MIX OR MUFFINS WILL BE TOUGH- gently fold in your apple puree.

4. Divide the mix between the cases, I get 6-7 BIG muffins out of this mix.

5. Sprinkle over the crumble topping.

6. Bake in the oven for 25-35mins, then leave to cool

Whilst muffins are in the oven whip up the cream. When the muffins are cold, use a teaspoon to make a hole in the muffins place cream inside the muffins.

(I put the cream in an icing bag with an icing tip stuck it in the muffins and squeezed some cream in lol).

Add some apple puree to the top and a sprinkle of cinnamon.

  9. Who cares about carpets when there is cake? (or muffins). There’s something awesome about spur of the moment creations, and when you add proper fresh whipped cream – I’m sold.
