Who can resist a Gingerbread? Certainly not me!

I’m very fond of the chocolate dipped Gingerbread Man that they sell in my local cafe, delicious with one of their special Autumn Lattes!

This recipe is just as good as the cafe ones! I promise. It’s my favorite gingerbread recipe. I have used it since my kids were small.  They don’t like hard gingerbread men and this recipe gives you soft and chewy one.

So I decided to give my Gingerbread Man a Halloween makeover and turn them into Gingerbread Mummies.

These Gingerbread Mummies couldn’t be more simple, I used melted white chocolate for the mummy wrapping and candy eyes that I got in the supermarket.

I think they make a delicious Halloween treat and a fun bake to do with young kids.

400g plain flour

¾ tsp bicarbonate of soda

2tsp ground ginger

2tsp ground cinnamon

½ tsp ground allspice

¼ tsp ground nutmeg

½ tsp salt

180g unsalted butter, at room temperature

125g soft dark brown sugar

1 egg

125g black treacle



200g white chocolate melted

Candy eyes


Sift together the flour, bicarbonate of soda, ginger, cinnamon, allspice, nutmeg and salt in a large bowl and leave to one side

Put the butter and sugar in an electric mixer  or food processor and mix until soft and fluffy.

Beat in the egg and treacle, scraping any unmixed ingredients from the side of the bowl with a rubber spatula.

Add in the flour mixture a bit at a time, scraping down any unmixed ingredients from the side of the bowl with a rubber spatula. Once you have a smooth dough remove wrap in Clingfilm and leave in the fridge for at least 2 hours before using

Preheat the oven to 180°C (350F)

Remove dough out of the fridge and leave to soften for about 10 minutes. Lightly dust your work surface with flour and roll out the dough to a thickness of about 4 mm with a rolling pin.

Cut out your gingerbread man shapes with the biscuit cutters. Arrange the gingerbread on the prepared baking trays and bake in the preheated oven for about 12–15 minutes.

Leave to cool slightly on the trays before turning out onto a wire rack to cool completely before decorating or your chocolate will melt when you try to pipe it on.


Melt the white chocolate let it cool slightly and pour into icing bag.

Snip the end of the icing bag and drizzle the white chocolate in lines across the gingerbread men.

Use the melted chocolate to stick the candy eyes on
